"The Meat Processing program at the Stuart Career Center is part of the Career and Technical Education Department of the Goose Creek Consolidated Independent School District and is providing training for 11th and 12th grade students. This year, 25 students are developing knowledge and skills in various areas, such as safety, meat quality, meat identification, meat grading and selection, harvesting principles, meat fabrication, meat preservation, meat merchandising and marketing, and leadership. Students in the class are also gaining knowledge in character education, 21st century employability skills, and work ethic."
